Aside from the stuff they added to spiffy the game up for a demo presentation, the loading screens are different than the final PS1 version. Most notably, the track loading screen is identical to the PC version, while in the final game the progress markers are replaced with a spinning disk and "Loading" text.

Some things I have noticed is that some colors are different from the PC demo and the final game (the whole Imperial Grand Prix is desaturated and the blue powerup bricks are way oversaturated), plus a couple other textures are different (the bubble the Warp makes before the teleporting animation).

 

And the music loops badly.

I think that's just something that happens with the PS1 version.

 

Ah. I am not familiar with the PS1 version of this game, so I don't really know. I was just searching for the main differences from the PC version, which I'm not completely familiar with either anyway.

The PS1 and N64 versions aren't graphically identical to PC. There's texture changes here and there, and at least some detail differences in the tracks (notice anything?).

I think the waterfall in Dark Forest Dash was altered in one of the versions.

Yep, the conspicuous gap in the falls was cleared away. Still has the awkward patching on the fence, though.
